It’s hard to find a more quintessentially Southern food than buttermilk biscuits. And it’s hard to find a place making better ones than Bojangles.

- In order to become a Master Biscuit Maker, you have to take a course and pass a test where your procedures, speed and yield are scored by a supervisor.
Sound intense? That’s because Bojangles takes its biscuits very seriously. Almost as seriously as we take eating them. 😉
To get the inside scoop, we interviewed a Master Biscuit Maker from Kannapolis named Felicia.
- Why now? Because May 14 is National Buttermilk Biscuit Day and we couldn’t think of a better way to celebrate.
How long have you been working at Bojangles?
I’ve been with Bojangles for 16 years, and I’ve been a Master Biscuit Maker for 14.
Why did you want to be a Master Biscuit Maker?
I just really like to make biscuits. And I like to keep the customers happy and see the smile on their faces when they taste them.

Did you like biscuits before you worked at Bojangles?
Haha, not really. But now that I learned the right way to make them, I love them. Ours are hearty. Plus we have the Bo-Berry Biscuits if you’ve got a sweet tooth.
Do you have a favorite menu item?
Probably the Cajun Filet Biscuit. I love the cajun spice on it.

How many biscuits do you make in a day?
Probably about 2,000!
How long does it take to make a biscuit?
About five or six minutes (not counting the time in the oven). Sometimes, I can do them in four and a half minutes.

What’s the best part about your job?
The community and the people I work with. They all feel like family and we’re committed to the people we serve. We like to put a smile on their faces by giving them good food.
