Loaded fries food truck What The Fries to open first restaurant

Popular food truck What The Fries will open its first brick-and-mortar restaurant in south Charlotte in early 2021.

Known for its loaded fries, What The Fries is one of the few success stories of 2020 — it’s grown despite the pandemic. Sales are up 33 percent over last year, which allowed chefs and co-owners Jamie Barnes and Greg Williams to move to the next step.

“This is a long time coming,” Barnes said in a statement on Tuesday. “Being in one spot — and not on the truck — will give us a chance to spread our wings from a culinary perspective.”

Barnes and Williams opened the food truck five years ago. The new space, located at 10707 Park Road in a former Cici’s Pizza, will have seating for about 100 in 3,420 square feet.

The truck will temporarily close when the restaurant opens.

What the Fries line

Menu: Food truck favorites will still be available at the restaurant.

  • Shrimp and steak hibachi fries – sauteed shrimp and steak, bok choy, carrots, house-made yum yum sauce, and scallions atop hand-cut fries.
  • Bread pudding tots – fried bread pudding bites with rotating toppings.
  • Burgers – served with one, two, or three patties with garlic mayo and American cheese on a brioche bun.

Bonus space: The former Cici’s Pizza had a game room, which will become space to promote and sell works from local artists, Williams says. “This space will be us: hip-hop, family-friendly, welcoming and fun.”
