A new brewery named Southern Solstice Brewing will open down the street from Unknown Brewing near Bank of America Stadium.

Southern Solstice Brewing will occupy the cool mid-century model building at 1200 S. Graham Street in The Gold District.

The 3,200 square foot taproom and 1,800 square foot front patio plans to open in middle to late summer according to co-owner and head brewer Tim O’Neill.

“I like to use rare and hard to find malts,” Tim told the Agenda. “We’ll have some unicorns in the IPA realm.” Expect English style beers, pale ales and IPAs. There are no plans to have flagship beers, everything will rotate.

Don’t be fooled by Tim’s low-key Pacific Northwest disposition (he’s from Portland), the guy knows his stuff. Tim worked as an investment analyst at J.P. Morgan before moving to Charlotte and starting a consultancy that helps brewery investors/owners open their doors (think permitting, construction and budgeting).

Southern Solstice Brewing’s mid-century modern space will have about 85 seats inside and another 130 out front.

While the intimate taproom will occupy only one floor, there will be a mezzanine area where guests can view the brewing happening on the floor below. Another cool spot is a window bar that’ll have an amazing view of the Skyline.

Side note: They’ve also got a shocking 65 parking spaces, which is rare given the location.

Southern Solstice Brewing will not have a kitchen inside, but they’ll be purchasing a food truck that will focus on “classy bar food that doesn’t break the bank” according to Tim. He plans to buy meat from local suppliers and will also serve coffee from local roasters. “This will not be just another taproom.”
